Each Enterprise (all 6/7 of them) was just of a 'standard' class of ship. The original NCC-1701, for instance, was a classic Constitution-class. The USS Constitution was the first of this class. The NCC-1701-A was a Constitution Refit (also, the original 1701 was refitted before its destruction) - all surviving Constitution-class were upgraded with the same refit. The 1701-B was built of the USS Excelsior's class. The 1701-C was an Ambassador-class (only seen in one episode of Next Generation). The 1701-D was a Galaxy-class. The 1701-E was a Sovereign-class. Each of these ships was just one of a fairly uniform class. The Enterprise did not get any special systems compared to the rest of the fleet, to the best of my knowledge (though a replacement in the series was often among the most advanced classes at the time - such as the B being an Excelsior or the E being a Sovereign) - however, the crew of each most certainly had to be the best Starfleet could offer.
There is, of course, one exception to all this: The NX-01 Enterprise. It was an experimental craft and was the first of its kind.
Now, on the matter of Star Wars...

Eclipse (which measures about 17.5km, according to Wikipedia).

The 'fluff' (Wiki: "A term for anything shallow or superficial. It can be applied derogatively, such as to describe news media; and neutrally, such as to describe the portions of role-playing game books that are not about rules mechanics.") does mention 'Stargates' which were used, before Humans developed Hyperdrive and shared it among the races, to travel between worlds. The Intro even shows one floating in space as it forms an event horizon and a ship flies through. Why they can't still be used even after Hyperdrive, I have no idea. Kinda silly to just leave a nice, convenient network of gates like that behind.
Hell, the Goa'uld don't neglect the Stargates in SG-1, even though they have Hyperdrive. Why should the races in this game do the same?
