Changing file paths for GCII and expansions.

I get annoyed when my '...\Documents' folder gets cluttered up with games directories when I have a perfectly good '...\Games' folder available. My rage, alas, is rendered impotent by my inability to change where the offending directories are saved without everything not working as it should and the folders just being remade. Galactic Civilizations II, for all of its innumerable merits, is one of these guilty programs.

Can anyone help me change 'C:\Users\Dionok\Documents\My Games' into 'C:\Users\Dionok\Games\Stardock' without breaking anything? Is there a method for this that will work with all of the other games (and other programs too) which create folders in Documents without asking (and that won't put everything into 'Games', as certain programs that are not games have this habit too)?

I'm using Vista 64-bit, if it's important.
