Diplomatical: Chances are that certain files from the full version of the game have been overwritten by the trial version. I don't believe that there are settings in the registry or otherwise that act as a flag, telling GalCiv2 whether it's the full version or the trial (This would be too easy to workaround, otherwise).
If you do uninstall, the files at MyDocuments\MyGames\GalCiv2\ ... should be retained, which include your game settings, saved games, etc. You may want to keep a copy of this directory, just in case.
After you uninstall, you should be able to reinstall then through CDs or Stardock Central. If through Stardock Central, you may want to keep an archive of the files by choosing the option through the right click menu. This way you do not need to download much to get to the latest version should the need to reinstall GalCiv2 arise again in the future.
