Transports are intercepted by ships that can't see them

I had a nasty fight going in at a border, and decided to get my troops transports back a sector or two. Seeing as I didn't have any ships to cover them, I sent them unescorted.

The very next turn, one of the enemy fighter groups has locked onto these transports to pursue, even though there isn't a single ship of theirs that can have seen them. What are they, psychic?

There could have been other factors leading to the fighters tracking your transports. I know from experience that loosing enemys in the depths of their sensor radius isnt an easy game to play, the AIs will often keep hunting in a particular direction even after you are out of their range (makes for some very taught cat and mouse!)

Might also be worth checking out any nearby starbases. Even something so benign as an economy or mining starbase can greatly extend someone's sensor range. Teancum is right, though; when a ship disappears into the fog of war in a certain direction, it's entirely reasonable to send ships out in that direction to look for it.

He might have had "Eyes of the Universe" or a nearby enhanced scout ship too.

Whenever I'm hunting a particular ship sometimes it moves out of sensor range but my ships autopilot compensates and can judge reasonably well where the ship is going.

This works even better on higer espionage ratings.

Wow... Sometimes the AI has trouble enough attacking unprotected transports that are on an adjacent square.
