Custom Race, Scenario Map

How to be a custom race

I really want to play the scenario maps (especially dread lords on parade) but I only ever like being my custom races. HOW can I change this.....

Also..

You know how you can pick different custom maps? Like duel, and chaos, etc? Are there any descriptions of what these are like?
