Is there any way you can buy more than one ship at a time???

Not from the same planet. However, if you forsee the need to buy more than one ship ahead of time, you can instead build a fleet of cheap tiny ships. When the time comes to buy a bunch of ships, just upgrade all the tiny ships into the ones you wish to buy.

You can buy multiple ships from the AI though.....

Expensive, but a good way to undermine an AI's military just before you go to war with 'em!
